(DTP-M) Drinks Trade Management Professional Certificate
Duration: 12 hrs over 2 days
Outcome: Drinks Trade Management Professional Certificate
Target Participants: restaurant and hotel managers, food and beverage directors, senior service staff
Day 1: participants will learn a practical, successfully proven approach to designing a wine list, establishing pricing strategies, managing inventory, buying and cellaring wine and increasing sales. A study of current beverage industry trends is also offered.
Day 2: focus on customer service and sales. Participants will learn how to taste and evaluate wines professionally, familiarize themselves with the world's classic grape varieties, learn the dynamics of food and wine pairing, polish wine and drinks service skills and master the art of selling and salesmanship. Evaluation: 45 minute multiple choice examination. A minimum score of 60% is required to earn the Management Certificate. Course Fee: $395 + GST

Duration: 6 hrs in 1 day
Outcome: Drinks Trade Service Professional Certificate
Target Participants: all levels of management and service staff
This one-day program will enable participants to taste and evaluate wines professionally, become familiar with the world's classic grape varieties, learn the dynamics of food and wine pairing, polish wine and drinks service skills and master the art of selling and salesmanship. Evaluation: 30 minute multiple choice examination. A minimum score of 60% is required to earn the Service Certificate. Course Fee: $225 + GST

Duration: 16 hrs over 2 days
Outcome: Court of Master Sommeliers' Introductory Certificate
Target Participants: all levels of management and service staff
This is an information-intensive two-day survey course covering all the world's major wine regions as well as viticulture, vinification, spirits, wine service, and the deductive tasting method. Candidates are taught by Master Sommeliers.
Evaluation: 45 minute multiple choice theory examination. A minimum score of 60% is required to earn the MS Introductory Certificate. This is a prerequisite for the Advanced Course. (BB-1) Beer Basics
Duration: 3 hours on one day
Outcome: Beer Basics Certificate of Participation
Target Participants: all levels of management and service staff
This comprehensive three-hour seminar covers the essent ials of beer. Learn the primary families of beer and how to differentiate them, the role of ingredients, the basics of beer style and principles of pairing beer with food. Select tastings will reinforce the informat ion of fered. Upon complet ion, you will have the knowledge to guide customers through most major imported and domestic premium brands.
Evaluation: There is no evaluation for this workshop. Course Fee: $95 + GST

(S-1) That's the Spirit
Duration: 3 hrs on 1 day
Outcome: That's the Spirit Certificate of Participation
Target Participants: all levels of management and service staff. A comprehensive look at spirits groups with a fundamental approach to classic cocktail categories. Learn the basic rules and techniques in mixology, what works and why. Maximize spirits use for the bar. Includes a tasting of spirits and select cocktails. There is no evaluation for this workshop.
