Eduardo Vallone joins DiVino Wine Studio from his family Vineyard, Santi Dimitri located in Puglia, Italy for one night only in this very special wine tasting and food pairing dinner!
Santi Dimitri is a family-owned winery at the southern tip of Puglia, the “heel of the boot,” ideally situated between the Adriatic and Ionian seas. The estate has been in the Vallone family since the 17th century, although the vineyards underwent a renaissance in the 1990’s when Vincenzo Vallone reduced production, modified the viticulture and significantly improved quality. The winery uses sustainable agriculture practices and natural winemaking techniques. Grapes are picked at night and Edoardo uses vinification techniques, including fermenting and ageing stainless steel (even for most of the reds) that allow the grapes to express their natural varietal characteristics, resulting in wines that are fresh, complex and delicious.
