Well right before Christmas Tom Spears from the Ottawa Citizen dropped me a line to ask me about a new report released about Champagne (see the pdf attached here). In his article "After the Cork Pops… the Science of Drinking Bubbly", Tom reports on the results of the study noting the ideal temperature and reinforces the role of the flute in maintaining the bubbles in bubbly.
