Tea: It’s the stuff of ritual and relaxation, of ceremony and celebration. Here in North America, we’re still catching up when it comes to learning of the health benefits of this antioxidant-rich beverage, but many Canadians have begun drinking more tea, both for health and pleasure. But what about getting the benefits of tea from food? This evening, we’ll explore different kinds of tea – from gunpowder to oolong to Darjeeling and beyond – and prepare delicious savoury and sweet dishes that make use of tea as an ingredient: shiitake mushroom and green tea noodle spring rolls with soy-matcha dipping sauce; Darjeeling-infused chickpeas on home-made flatbreads; genmaicha tea, udon and vegetable soup; oolong-smoked duck with green tea rice and seared Chinese greens; gunpowder tea-marinated beef kebabs; roast potatoes with matcha tea spice rub; Ceylon-braised root vegetables and, for dessert, matcha green tea cheesecake.
